Rolling it up in San Antonio: Sister Schubert Cooks Easy Father’s Day Recipes on KENS-5 Great Day

Yesterday morning, host Kellie Patterson helped me prepare some fabulous recipes for Father’s Day on Great Day San Antonio.
While cooking, we chatted about my work with Sasha’s Home, a foster family home for abandoned and orphaned children in the Ukraine, and my new book, Cast Your Bread Upon the Waters.

Kellie and I also talked about the importance of the family meal and of spending quality time as a family. One of my missions is to share easy recipes that families can enjoy together, because regular family meals contribute to a better quality of life, especially for the children.
My Mediterranean Rolls make a simple and delicious appetizer, especially when you serve them with homemade coleslaw using the famous Marzetti Original Slaw Dressing.
Mediterranean Rolls

Sister Schubert's Mediterranean Rolls
8 ounces crumbled feta cheese
1/3 cup mayonnaise
1/4 cup chopped sun-dried tomatoes in oil
2 teaspoons chopped fresh basil or 3/4 teaspoon dried basil
1/2 teaspoon pepper
2 pans thawed Parkerhouse Rolls
Combine first 5 ingredients. Open each roll and spread with about 1 teaspoon cheese mixture; close rolls.
Return rolls to pans; cover loosely with aluminum foil. Bake at 350 degrees for 15 minutes or until thoroughly heated. Serve warm. Yield: 32 rolls.
