Summertime, and the Cooking is Easy – with Sister Schubert’s Homemade Rolls

Memorial Day is just around the corner. Schools soon will let out, and summer picnic and barbecue season is almost here. It’s time to start thinking about casual entertaining and easy-to-prepare foods that transport well.

Summer cooking today is much easier than when I was a girl. We made almost everything from scratch, including yeast rolls and other breads, which required spending long hours in a hot kitchen.

I started Sister Schubert’s Homemade Rolls so that families could have a convenient way to enjoy the homemade taste and quality of fresh-baked yeast rolls at everyday meals and family gatherings.

I’m all for modern conveniences, but I’ll never compromise on quality. Sister Schubert’s Parker House Style Yeast Rolls and Dinner Yeast Rolls are made with the same fresh milk, eggs, butter and other quality ingredients that my grandmother used – with no preservatives, no artificial flavors and 0g trans fat.

When everyone is on the go, Sister Schubert’s rolls make a perfect base for bite-sized sandwiches like our Grape Chicken Salad, Barbecue Pulled Pork or Chicken Mini-Sliders and Panini Sandwiches. Use the recipes below for children’s summer lunches and snacks, or prepare them ahead of time to share at your social gathering.

Grape Chicken Salad
Makes 32 small or 16 larger open faced sandwiches
Prep Time: 25 minutes
Cook/Bake Time: 25 minutes

Ingredients

  • 6 chicken breasts
  • One recipe Sisters Seasoning Mixture, see below
  • 1 1/2 cups finely chopped celery
  • 1/3 cup sweet pickle relish
  • 2 eggs hard boiled, chopped finely
  • 1/2 cup mayonnaise, or to taste
  • 4 tbsp reserved chicken broth
  • 1 cup green seedless grapes, halved
  • 1 cup sliced almonds, toasted
  • 1/2 cup grated Gruyere cheese, optional
  • 1 Package Sister Schubert’s Parker house Style Rolls or 8 Sister Schubert’s Dinner Yeast Rolls, sliced in half and toasted

Preparation
Preheat oven to 350 degrees F

Mist a baking pan with non-stick vegetable spray.

Season chicken breasts with Sister’s Season Mixture.

Bake 20 to 25 minutes or until chicken is thoroughly cooked.

Reserve 4 tablespoons pan juices. Chill chicken and chop coarsely.

In a mixing bowl, gently toss next 7 ingredients together with chicken, adding more mayonnaise if desired. Top each toasted rolls with a small amount of Gruyere and 1 tbsp of chicken salad for Sister Schubert’s Parker House Rolls and a bit more for the Sister Schubert’s Dinner Rolls. Garnish with toasted almonds.

Sister’s Seasoning Mixture

  • 1/4 teaspoon tarragon
  • 1/4 teaspoon lemon pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon Greek seasoning (Cavender’s brand is a favorite)
  • 1/4 cup fresh lemon juice
  • 2 teaspoons Worcestershire sauce

Barbecue Pulled Pork or Chicken Mini-Sliders
Makes: 16 small sandwiches or 8 large sandwiches
Prep Time: 15 minutes
Cook/Bake Time: 15 minutes

Ingredients

  • 1 package Sister Schubert’s Parker House Style Rolls or 8 Sister Schubert’s Dinner Yeast Rolls, split
  • 1 cup prepared or homemade coleslaw, see below
  • 2 cups (1 pound) favorite prepared barbecue pulled pork, beef or chicken, warmed

Preparation
Preheat oven to 350 degrees F. Bake rolls according to directions on package.

Split rolls and arrange on a plate. Fill each roll with warm meat filling and top with small portion of coleslaw. Serve.

Coleslaw Ingredients

  • 2 cups finely chopped cabbage or slaw mix
  • 1/3 cup Marzetti Slaw Dressing
  • Freshly ground black pepper

Combine all ingredients in a small bowl and mix thoroughly. Store covered in refrigerator.

Panini Sandwiches
Makes 4 sandwiches
Prep Time: 10 minutes
Cook/Bake: Time: 10 minutes

Ingredients

  • 4 Sister Schubert’s Dinner Yeast Rolls, split
  • 1/4 cup plain or sundried tomato mayonnaise (see below)
  • 4 slices roast turkey or ham
  • 4 slices Swiss, Monterey Jack, Swiss or Gruyere cheese
  • 8 small slices red onion
  • 1 cup fresh spinach leaves or several fresh basil leaves, optional
  • Salt and freshly ground black pepper Butter

Preparation
Preheat grill pan or panini machine to medium heat.

Spread center of each roll with 1 tablespoon mayonnaise. Assemble sandwiches with remaining ingredients, except butter. Season with salt and pepper.

Spread small amount of butter on top and bottom of each roll; place sandwich either in pan on onto panini machine and grill. Cook 5 to 7 minutes.

(If using a pan, press sandwich down with a pan lid. Cook sandwiches about 3 to 4 minutes on each side or until bread is toasted.)

Note: This recipe can be easily doubled or tripled.

Sundried Tomato Mayonnaise Ingredients

  • 1/4 cup mayonnaise
  • 2 finely chopped sundried tomatoes
  • Salt and freshly ground black pepper

Whisk all ingredients together in small bowl. Refrigerate until ready to use.
