Bacon Gruyere or Ham & Swiss Quiches

  • 4 slices bacon cooked until crisp & drained, then crumbled or 1/2 cup cooked & chopped ham
  • 1 ½ cups grated Gruyere or Swiss cheese
  • ¼ cup green onion finely chopped
  • 2 tablespoons butter
  • 5 eggs
  • 1 cup whipping cream
  • ½ teaspoon salt
  • ¼ teaspoon (dash) of cayenne pepper
  • 1 9-inch pastry shell

Sauté onion in butter until tender. Place in bottom of pastry shell. Beat eggs and cream together. Add remaining ingredients. Bake at 375 for 30 minutes. Let cool 15 minutes and serve.
